Pumpkin bread with chocolate chips

Get your Hallowe’en on with this scrumptious pumpkin bread recipe. It’s the perfect way to put your jack-o’-lantern innards to good use.

Bread:
— 1/2 cup coconut oil
— 1 3/4 cups spelt flour, spooned and leveled
— 1 teaspoon baking powder
— 1/2 teaspoon pumpkin pie spice
— 1/2 teaspoon salt
— 1/4 teaspoon baking soda
— 1 cup pumpkin purée
— 3/4 cup packed light brown sugar
— 1 large egg
— 1 teaspoon pure vanilla extract

Chocolate chips as you deem necessary. I absolutely do.

Directions:
— Heat oven to 350F degrees. Lightly oil a loaf pan (ideally 5″x9″). Whisk together the flour, baking powder, pumpkin pie spice, salt, and baking soda in a medium bowl; set aside.

— In a separate bowl, whisk together the pumpkin purée, brown sugar, oil, egg, and vanilla. Add the dry ingredients and mix until just combined. (Do not overmix!)

— Pour batter into prepared pan and bake until toothpick inserted in the center comes out clean (55-60 minutes.) Let cool in the pan for 15 minutes. Transfer to a wire rack to cool fully before serving (otherwise it WILL fall apart on ya.’)
